Everyone in Rome works for Ezio Auditore - either directly (being employed in one of the many shops that the master assassin owns) or indirectly (selling stuff to the shops owned by the master assassin or servicing people employed in said shops). If you are not, then you are usually with the kind of people that are on the stabby end of a pair of hidden blades, and should not hang around Rome for too long.

Ezio realises that this means he can do whatever the hell he wants, because everyone, including the soldiers, are in his employ in one way or the other.

He decides to demonstrate this by ravishing his lover (Leonardo? Sofia? Both?) in public and not have anyone make any kind of fuss about it. (This may also be due to the white-cowled people lining the rooftops and making little stabby motions if someone talks shit about their Maestro.)
